Flippin Good Carrot Cake!!


Kay, if you know me, you know I live to create delicious baked goods. Bought too many carrots the other day, and the dudes didn't nibble them down like I thought. So, I was complaining to Mindy, that I wanted to make a carrot cake, but didn't want to waste my time with a fluffy, crumbly piece of duke. She, being a whiz kid, says "why don't you google, moist, dense carrot cake." Took her advice and hit the jackpot. Seriously, this cake is so rad! Tell me if you make it and feel the same.
Dense & Moist Carrot Cake
3 cups shredded carrots 1 cup white sugar
1 cup brown sugar, packed 1/2 cup veggie oil
1/2 cup melted butter 1 teas. vanilla
4 eggs 1/2 cup drained, crushed pineapple
2 teas. fresh ginger 2 cups flour
1 teas. baking powder 1 teas. baking soda
1 teas. ground cinnamon 1/2 teas. salt
1/2 cup chopped, toasted pecans
Frosting
12 oz cream cheese, softened 6 oz. butter (12 tablespoons)
1 teas. vanilla 4-5 cups powdered sugar
about 2 teas. fresh lemon juice
Preheat oven to 350'. Spray 2 (8 inch) round cake pans with flour-added cooking spray, or a 9x13 pan with cooking spray. If using rounds, use some parchment paper on bottom, cause cake is kinda sticky.
In a lg. bowl, stir together the carrots, white and brown sugar. Let stand about 10 minutes to form a juice. Stir in oil, butter, eggs, vanilla, pineapple, and fresh ginger.
Stir together flour, baking powder and soda, cinnamon, and salt. Stir flour mixture and nuts (optional-count me out on them) into carrot mixture. Pour into prepared pans.
Bake for 30-35 minutes (unless you have a classy oven like mine, which takes about double the time) or until toothpick comes out clean. Let cool 10 minutes, then take out of pans (8inch) and let cool completely.
Beat together cream cheese, butter, and vanilla. Stir in sugar, then beat until fluffy and light. Beat in lemon juice, and have a spoonful to make sure it takes great. If you are like me, you will probably just stand over the frosting bowl and devour it for a good 3 minutes. Frost the cake. Worth it, I swear!
P.S. Off the subject but, the bad luck that I have with blow dryers is maddening. SO, I blew up another one yesterday. You guys, I am down like 6 dryers in like 2 years. Getting crazy. Anyone have a good brand that is trustworthy. I'm looking for professional. None of this light breezy crap. Help a girl out. You should see my hair today, pretty much butt ugly!!!!

I have the same trouble with blow dryers mine are always blowing up. Last time just a couple of months ago mine shot sparks out of it and then died. It was really interesting having sparks flying toward my hair. Anyway that one was from the beauty supply store and I still had troubles. Sorry lady don't know what to tell ya. But if you hit the jackpot let me know. I am sure I will be needing another one soon.

Hair dryer- I totally know how you feel. I Have to have a good (expensive) professional one. Otherwise it lasts only like a month or two. I bought 'Solano' professional brand at like a Sally's beauty/ hair supply store. I have had it know for 2 year and it still works like brand new! Good luck :-)
